2 Tbsp Ginger chopped
2 Tbsp Canola Oil
2 Leeks, chopped (white and light green only)
4 Sweet Potatoes, Peel and Dice
Pinch Salt and Pepper
6 Cup Chicken Stock
2 Tsp Ground Coriander
1 Tbsp Ground Cumin
Saute leeks, potatoes and ginger in hot oil for a couple minutes.
Add Spices, stir well.
Add stock, bring to the boil and simmer till cooked (35 minutes).
Puree about 3 cups - leave the rest chunky...
